Used pickup (brand of your choosing) and call it a day; it's the right tool for the job.
Went down that road with the wife and hit a dead end Believe me, I want one but already have 4 vehicles at the house.
Then I'd for sure want a full sized body on frame SUV (i.e. Tahoe).

I think that most SUV's tend to exaggerate their towing numbers, while most pickups tend to understate what they can actually handle. Given the highly competitive nature of the pickup market, and the fact that towing is such a big deal to truck owners, it makes sense that manufacturers ensure their truck can easily do what they state is possible.

Also, there is a difference between what a vehicle is capable of dragging behind them vs. what they can comfortably pull down the interstate.

As to the Pathfinder suggestion; friends have one (the generation mentioned), and they don't feel comfortable pulling their popup camper behind it (well under it's stated towing capacity). Engine has plenty of power, but it has too much control over the SUV at highway speeds.

They recently purchased an older Toyota Sequoia for the task (based on the tundra).

It's not just about what SUV can pull it, but what is going to pull it the safest and most comfortably (and, we are talking precious cargo)

I just spent 5 months with this same dilemma. I really wanted and ultimately bought a 2008 V8 4Runner. 7k tow rating, not too big, but they are hens teeth and plated in gold because people still want a ton for them even at high mileage. I finally had to settle for one at a dealer, which I usually hate dealing with.

To me, it really just depends on how big of a truck/suv you're willing to drive around. If you're daily driving it like I am then you may have to compromise. I didn't want a truck. I didn't want something a mile long. Etc.

If size doesn't matter I would look at the Infinity QX56. 9k tow rating, plenty of luxury, etc. Other end of the spectrum the v8 Grand Cherokee's appear to be good daily drivers that can also tow.

if you want the ultimate tow SUV that won't loose too much value over time I highly recommend a 7.3l diesel excursion. They will last about for ever and that engine will not loose it's value people still look for them.

My sister had one. It was about like driving a semi.

Hers had the V10, which was a dog (only produced around 300hp, and low torque numbers for it's size).

Hers chewed up front end parts (steering and suspension). It seems like she was constantly having something replaced (never went off road).
