I wouldn't bother with any modern mainstream brand for investment except for the very limited release stuff - GT350R, Z28, ZR1, Z06
Speaking of ZR1, C4 ZR1 is where I would put my money as a speculative bet to actually increase in value.

You like Jags? You know them. Why not the best last model, say 2006 or so XKR convertible, low miles, excellent shape, tons of fun to drive, will not loose much more and will go up and you can enjoy it while it does that, probably for less than 15k, then you invest the rest in apple and wallah!

^^^996 has the potential to be a collector in the regard that it is the only 911 that does NOT have the circular bug eyes.
My bro has a 996TT - awesome car to drive and with the wide body, still looks good. From a driving dynamics standpoint, Chris Harris has said that it's his favorite turbo - even over the 997.
