Welcome to marriage!
I have the M3, a highly modded MX-5, the Ridgeline, and 2 KTM motorcycles, all acquired post-marriage w/ my wife's blessing.

RX-8? Evo?
RX-8 comes close in steering/handling feel and is a 2+2. Reliability/MPG is questionable...but do your research and an RX-8 will be fine. Evo will have the go factor with excellent steering feel and more cargo room...but with a rough ride and boy racer look.
I'd keep the S.

step 1. teach her to drive stick
step 2. sell her car
step 3. buy her an s2k.
Marriage isn't all bad, my husband and I both have our dailies and our toys...his is the RX7, mine is the s2k....it's fun to cruise with your spouse. She'll love it.

Keep the S.
Sounds like you would hate riding in the Z,and absolutely despise driving it.
You're not even married yet and you wanna give up something you enjoy.Trust me the decision to keep the S isn't going to destroy your relationship....and I don't care whether you just started dating or been married 50 years ,you should never have to give up your pleasures to satisfy her.

As someone who has been married 14 years. Don't sell you car. If there are no kids involved give it a shot with both cars that you already have. As its stands now I have my S and my wife has her miata, and we have a pos chrysler pacifica for when we need to do anything with the kid. It is the best of both worlds. All you would be doing with your current plan is starting out resenting her.

It sounds like you're planning on selling your car because you think that you will need to. My advice is just to wait and see how it goes. Don't get ahead of youself. You were each fine with a 2-seater on your own, why won't you be fine with two 2-seaters together?

I definitely agree with those of you who said that it makes no financial sense. There is pretty much no car you can replace the S2K with that will make you just as happy unless you move up into the high end sportscar market... Or buy a used Lotus Elise ... Which you can do for the $20-25k you are willing to drop on another car.
