I would vote RX-7 ...would you like to buy mine?
They do 0-60 from 4.9-5.2
Top speed stock over 160 mph
.98g-.99g on skidpad stock (R1)
Classed in SCCA with the likes of the Z06, Vipers, Lotus, Porshes, etc.
much more potential than the s2k, though a drop top is nice. I would still pick the rx-7...less common and just more p[erformance. + it holds it value damn well. 12 years ago these cars were priced around 33k,
Now, an excellent condition rx-7 will still fetch you over 20k.

The third generation RX-7 was the best sports car ever made. If they were still making them I would have bought one.
The S2000 is nice, too, but ... sigh.

The RX7 is not that much faster/quicker than an S2000. It traps only slightly more than an S. But because of being turbocharged, the modding potential is much more. Handling is great too! However, its sin is its unreliability.

Ever drive one of those RX7s? You know how people say that with the S2000, you feel like you are part of the car? Well, with the RX-7, you are a part of the car, no "feel like" about it.
But I do think that where the RX-7 was the best sports car ever made, the S2000 may well be the best roadster ever made. And certainly reliability would be an issue with any RX-7 that was still around.
