What is the gearing difference between the two cars? Since the GT3 redlines higher, it can use gearing for torque multiplication better. Is this the case or does the turbo walk away easily?

Arguably, the GT3 is as fast or a touch faster than a regular 996TT, so gearing plays a critical role in the GT3's speed.
I chased a GT3 around a roadcourse a while back. It was very fast and the driver was very good. He had full-blown racing slicks and the ceramic brake option. One of the fastest driver/car combos I have been up against to date.
There was another GT3 on the track as well, but driven by a guy who didn't want to 'hurt' his baby. That said, he had straight-piped the exhaust eliminating the mufflers and it sounded BADASS!! Probably one of the best sounding Porsche's I've ever heard, save for the Carrera GT.

One of the nicer aspects of the turbo is the high torque -- but then as S2000 owners most of us here will also appreciate a high revving car with less torque.
