Outstanding!! You beat me to the punch. I have the exact same color/wheel combo on order. 3LT versus 1LT and no NPP. Though, now I am wondering if I really need the 3LT, since it will be a track/weekend only car and the 1LT is still plenty nice.
Anyway, congrats again! Can't wait to get more details on your ride!

I'm totally stoked with this car!!! Your going to love yours!!! I have to keep checking the garage to make sure this isn't a dream and I'll wake up to find the car gone. The performance is amazing. The way it handles and how you feel connected to the road. I also love the way the car sounds. The NPP exhaust was worth the money to me. It pulses with power, almost like it has a big cam in it. I love it!!!
Since your going to track the car the first thing I would do is ditch the run flats. They are great for safety but are lacking in overall performance.

Since you asked about the skip shift I'll tell you what I know of it based on Michael Lamm's book about the '84 Corvette. Lamm was describing why the '84 Vette used the now infamous 4+3 manual with auto overdrive instead of a conventional 5spd. The reason was the EPA. When you test a stick shift the EPA says when you (the computer simulated driver) can shift. Now in most cars this isn't a big deal. The driver shifts into second at say 15mph, third at say 30 and 4th at say 40.
The best way to get good mileage numbers is to ship shift. A car like the Corvette is just made for skip shifting. When driving a C6 I forgot which gear I was in half the time because the car just has sooo much power.
Lamm goes on to say that GM engines explained that a wide ratio 3 spd was the best transmission for an EPA test because it got you into top gear the soonest. Of course it would suck all the performance out of the car but it would help mileage.
What about the C6? Well rather than using an automatic overdrive like the early C4, GM now uses the skip shift. According to the EPA test, 4th gear becomes second. Fifth gear is now 3rd and so on. That allows the Corvette to turn in good numbers yet still have great gears for running hard. It's also an example of a bureaucratic, one size fits all government solution to a problem.
In the end I got around the skip shift by doing a 1-3 shift when I didn't need the power. Third is like the Corvette wonder gear. You have power from 15mph on up to 120+.
