Am I being paid to drive? Then performance wins.
Am I driving for my own enjoyment? Then fun-to-drive wins.

i would choose fun to drive. i choose that because after a certain point, can you ever really use ALL that performance on the road?
i guess because i daily my S, and i spend a lot of time in it, i would like to have fun while im behind the wheel.

See, I've done '01 C5 then '05 S2000 then '08 C6. I would say for around town driving, the S2000 is at least as fun to drive as the C6, but on the track, I was falling asleep driving the S2000 whereas the C6 just comes alive and haul a**.
I gave up some of the nimble, top down, rifle gate shifter feel of the S2000 for a 440rwhp V8 scream and better ride quality and interior quietness when cruising. I've since added an MGW shifter to the C6 and it's now 100% of the S2000 shifter's precision for about 30% more effort.
Re: the 911 vs. C6, I've had quite a bit of seat time in an '06 911S on the track and around town and honestly, the steering was nice, the interior was nice, sport shifter was good, but it just didn't do much for me. The engine was too quiet at high rpm (he had sport exhaust too), had a nice guttural sound under 3k rpm at part throttle in sport mode, build quality/tightness was superb, but overall, it was a bit underwhelming.
The GT3, I'm sure, is awesome, but is it worth 3 times my Vette? I don't think so at this point, but my mind may change down the road.
