Older cars, in my experience, burn and leak oil pretty frequently and I have to add more oil. If I do this regularly and the oil pretty much stays the same texture (golden with some black), do I still need to flush/change the oil the traditional way? Because since I'm adding new oil pretty frequently (to my 91 MR2) to replace lost oil, does that have the same effect as changing the oil?

It has sort of the same effect, but you still need to change your oil and especially oil filter. Remember, the oil is burning off, but the particulate matter suspended in the oil is not, so it continues to build up even if the oil is burning off.

Eventhough the oil might appear to be clean looking, there are far too many particles you cant see in it. When the filter gets clogged up these particles will not be collected, therefore staying in the oil and not helping the engine life.
