I've also seen a lot of them on Goldwings through the years. Mainly the GL1500's which are 1.5 L horizontally apposed 6 cylinder engines. These bikes aren't slouches but they're not up to liter class sport bike performance either. Having said that, an experienced rider on a Goldwing will embarass an average rider on a sport bike without too much trouble so don't underestimate them.
You can also get police rated motorcycles from BMW (1000cc "air head" and 1150 "oil head" flat twin engines) (common in Europe), Kawasaki (1200 cc inline 4's) (at least you could, they're not to common in the States any more as far as I know), and the Honda ST1100 (1100cc V-4) was available in police garb but also not very common here.

My brother lives in Canada and they'll definitely chase you there. I won't say where he lives but he ended up with 12 cars and a chopper chasing him (with infra-red). He only got away because a) he knew the area, b) he was willing to lay down in a hay field for two hours, c) he can drive, and d) he wasn't scared to max his bike out (2003 CBR F4i). A helicopter with infra-red at night is going to pick you up pretty easily, especially if you're in a remote area.
Best bet is to not run at all. Better yet, don't drive in a way that makes them want to pull you over. If you're speeding (but not terribly) they'll typically let you go on by - they're looking for easier targets.
