God, neither. v6 Rustangs (actually, Rustangs in general) are terrible ugly cars. I'd rather drink a gallon of chum than drive either of those cars (let alone be seen as a passenger in one).

A Miata would be the best fun to drive roadster for $5k, but maybe you'll get lucky and find a ratted out S2000 for that money!
If you want/need four seats a V8 Mustang is a good choice. Relatively economical and easy to fix, decently fun to drive. The V6 was a dog car imo. I wouldn't waste my time on a compact if I was visiting the US for a few years - drive an American big-engined car.
No Eclipse. You could get a Sebring convertible if you wanted a large convertible.

Pretty much what saki said, but another option if you must have a back seat is a 2G eclipse GST Spyder, I'm not necessarily endorsing it, but at least it has, uhm, some fun? But good luck finding one.

There's probably nothing wrong with the Eclipse, but it's FWD and doesn't really have anything to offer over the Mustang.
I don't think you are going to have much luck finding a clean 99+ V6 Mustang for $5K, that's definitely on the low side. All you are going to find are very high-mileage cars that haven't been cared for. There's a reason people are suggesting a Miata - it's a cheaper car. I'd rather have a Mustang V6 coupe than a Miata as an only car, but for your budget I'm not sure you're going to find what you want.
