Budget of $120k, what car would you get?

If it's going to be a once in a while or weekend car, why not go for a Testarossa then? That should push all your buttons and then some; keep some money in your pocket as well.

To throw something else out there since you already own two all time favorites.. Have you considered a plane?
My partner and I have a modest fun car stable, E39 M5 and a built 240Z but also have a Lancair 360. Fully aerobatic, 200kts cruise at 65%, 8.5 gph.
Cars are great but the third dimension adds a whole new level of fun. Given your line of work you must know a few people into general aviation.. Get yourself in a ride in an aerobatic plane and it'll offer a whole new perspective on "fun." Plus, it's a great way to travel and create memories with the family even with something more practical like a 6 seat twin.

Cost is the main thing that's kept me from getting a pilot's license and plane, but it must be fun! I'm friends w/ a couple who live in a neighborhood w/ a runway running through it right behind their house. They have a hangar in their back yard, and can fly pretty much anywhere right from their home. That's what I call living the dream!

As shown at 114k, 2013 Corvette ZR1. Maybe I am missing something here? Maybe I misinterpreted and you meant that the "old ZR1's are cheaper now because they don't make them anymore."
Either way, from a performance only standpoint the ZR1 is hard to beat. However, it does not have the exotic prestige that a lot of the other cars in this thread carry. It's easy for me to sit here and say I would buy the ZR1 if I had the money to spare. However, considering I chose an S2000 over a C5 Z06 kind of makes me think I would go a different direction when it came down to it. Either way, your problem is a good one to have, haha.

You are correct. For some reason I thought 2012 was the last year until the C7 Zr1 showed up. But, if I was in the market for a zr1 I would probably look to pick up a slightly used 2012 instead of a new 2013.
