OK, reality check. If you had $25K free and clear to spend on a track car, and could keep the NSX, I'd stick with my S2K recommendation.
But here's my thing: you've already got an NSX!! Why is it so beloved to you -- because the paint's so shiny? NO! It's because the NSX is arguably one of the greatest track cars ever made, the one that S2K and Miata owners dream of! In fact you've already said it's not a great daily driver -- well, drive it like it was meant to be driven!
You can keep it essentially stock (just tires and brake pads) and it'll be a hugely fun and capable track car that will take you years to "outgrow" in terms of your driving skill. A few years down the road, when you're really ready to go wheel-to-wheel racing, go ahead and sell the NSX (if you still must) and get a spec Miata, but in the meantime don't waste this opportunity. Take your $25K and put it into a daily driver.

oh the e36 M3 CAN be pimp as hell. all depends on what you do to it. Tints are key

Clean. I like it. I still like the E30 M3 for a track car though...

I would go with the RX7 - any year. There is a guy with an all motor 13b in a first gen RX7 doing 9's in the quarter. Then you have the Turbo II second gen, which can be had for cheap and modded like crazy. Or you can go with the sub-legendary 3rd gen RX7 Twin Turbo. The only problem with this car is that the TT system is very complex and restrictive. But get a 3rd gen RX7 with a single turbo kit, stripped, all the bolt ons, ect, and you have a very fun fast, unique car!!
