The Shoe- well I would like to find a 315 HP version if i can.
The S52 cars can be had in that price range, but you will need to spend 3-5 grand on suspension, brakes, wheels, tires, an oil cooler ... etc. I've been down that path. In the end you do have a decent track car, but nothing spectacular.

The reason the NSX is not ideal is b/c- parts are expensive, tires are very expensive, the Targa top reduces rigidity. The weight(my pet peeve) is 3160lbs. The C5 and Z06 are in the same category. If I was going to do that(get a Z06) i would prefer to keep my nsx. Plus, I HATE, repeat HATE the thought of scratching up my beloved NSX. A miata- who cares if you have to replace the bumper or the fender. At one time, I was thinking of keeping the NSX, getting a daily driver, and buying a track car. Well, lets just say the BOSS stepped in.
The ITR is a great choice. I wonder about it being fwd. The E36 M3 is an ideal choice. At least you can carry the track tires in the ITR or the M3/coupe. The s2k is a good choice. Its just that the parts are not cheap as of yet, can't carry rims/tires, and I would have to spend money on it to make it a cage. I would think it would be smarter to start out with a cage.
The kit cars are out of question b/c of lack of parts/support. I would buy a NOBLE if that wasn't an issue. Besides, I don't want to tow the car to the track(Schumacher- I am not). Then I will have to buy a tow truck, which lead me back to 4 cars- which would mean I would have to spend alot of money of my wife to keep her happy.
Keep it coming.
