Best non s2k project car?

What's the budget for this "project car" and how extensive? FYI, no "best" project car, just cars that I'd love to drive and track.
Money is no object?
-Air cooled Porsche of any vintage
Money is limiting, but have a lot of tools, access to garage, friends, and mechanical know how?
-BMW E30 or 2002 with F22 swap (or K20/24)
-NB miata with F22 or K20/24
-Datsun 510 with... guess what motors?

Hmm, I wonder if any decent Plymouth Arrows remain? Should be able to stuff some interesting engine in there. Somewhat tight on headroom, however.

Miata is a good answer all around. My son just picked up a 2000 miata ls, it's pretty worn out, compression is good but it need rings.... needs a rebuild.... but it runs every day. Needs an interior, top, body work, and some tlc. parts are cheap compared to most other cars. This was a $1700 miata, that's rare that you can find one that cheap that runs. This car can take you on a 100 mile trip no problem but it needs TLC. There are leaks too. his goal is to have a track car, his car came with a new suspension, a lsd factory, no abs, 5 speed, tan top and interior. It looks like a wild animal got loose in there, but it works, it all works!
My choice for this car would be to restore it to it' former glory with the "wheeler dealer" approach and enjoy it or sell it....or do a full drive train sway\p and have a nice cool custom car. He just wants to do a track car.
I would pick something else...maybe a used s2000 to go along with the one i have and sell it , the "wheeler dealer approach". Or a 911, drive it, enjoy it, give it tlc, etc...
