Good luck finding a reasonably priced FD RX7, (rolling shell or running). It's like a cult following with those FDs. People hold on dearly to those cars, understandably so, as they are pretty awesome machines. You're better off finding an FC. I second the aforementioned E30 M3 and MR2 (W20-second gen) suggestion.
I also agree with Legal Bill's advice pertaining to the complexities in a shared project investment. Take heed to his advice.

Lexus SC 300/400 or a Nissan 300ZX (a 2jz in those things never gets old!)
Acura Integra (K-series swap / Track-spec or turbo or heck...both)

If time & $$$ are no issue... I would love to restore a 1990s era NSX.

the answer to every question is Miata. Lots of great projects out there.
My own "project to tackle once my current one is done" is the porsche 944/renegade hybrids LS swap. For about 10K all in, there's lots of fun to be had.

I'm looking for fd's right now, and I know it was mentioned by someone else but I have also been looking for an nsx....talk about a dream project car......
As far as money that is great advice..
If at some point I feel this is all too much I could always switch over to the motorcycle realm and find a project...But right now I'd say I'm definitely looking for an fd or nsx.
although an LS miata.........that might have to be third on my list

Depends on budget. I've always had a 240Z to play with.
If I were spending more, I'd like to do an LS swapped Boxster S. Renegade Hybrids make a whole swap kit for just a few thousand, + car at 10-12K (that you can drive fully in tact and have fun with until you save up enough for the entire swap), plus mods, = $25K total for a badass, mid engine, RWD, 400+RWHP Porsche that sounds good and has tq for days.

Old single cab pickup (like a Sonoma), swap in AWD, a junkyard LSX, and boost it. You'll be able to easily make 600whp. If anything breaks, ah shucks. You'll be out a whopping $800.

Also, MR2 Spyder with a V6 swap. They weigh 2,200 lbs with the swap and make 270ish to the wheels with a stock internal (read: will last forever) Camry engine.

Or, my personal favorite, Honda Beat with a K24. I need to step away from this tread before I start spending money.
