And think about it from their perspective: you can't go from C63 back to C55, it would be a marketing disaster.
If you're going to blame anyone, blame the original marketing execs of these german manufacturers who thought it'd be a great idea to name their vehicles with the assumption that "bigger" necessarily means "newer" or "better". It sure has bitten them in the ass now.

S800: 791cc
S600: 606cc
S500: 531cc for production models, originally designed to be 492cc
S360: 360cc
The only car true to the name was the S360, but it never was put into production.
