Vacations?

Vacations?
So here's the deal:
My wife just said she needs some time away from work and life here. She rarely says things like this, so I'm starting to think about where to go for a vacation. Not sure where to go, and I need some suggestions.
Here are the parameters:
1. 2-3 weeks from the middle of July to early August
2. Nothing too hot or crowded (e.g., Vegas is too hot in July, Italy too hot and crowded this time of year).
3. Relatively relaxing (i.e., I don't want to wandering around trying to figure out how to use the train system while being yelled at in a language I don't understand), but doesn't have to be a lie around the pool vacation.
4. Ideally a mix of some adventure (hiking/climbing/surfing) and some historical sites (geeky "Lord so and so took a crap in this hole 175 years ago" kinda stuff). Museums are good too.
I'm thinking maybe south america, maybe New Zealand, or a road trip up the coast to Washington.
Any other ideas?
