I agree with everyone but especially i_heart_my_DB8. I did that with an ex-girlfriend and it helped her tremendously.

Ionno but for me I've made it a rule that a guy should never teach his significant other how to drive stick. I guess I've just had a lot of bad luck in the past. But if you absolutely have to, I agree with the other guy. Find an area with lots of space, where nobody else is around.
Are you gonna teach her in the s2k?

I taught an old g/f in my 99 Civic Si... she picked it up like a champ and then drove me to San Francisco a couple weekends later in my car. 
What the others are saying already is absolutely spot on -- really focus on explaining/demonstrating the basics, and just take it one step at a time in a pressure-free environment, perhaps in small pieces over the course of several sessions so that she can sort of practice "remembering what she learned last time" which can only solidify her understanding of it all.

Gl with teaching her, id say get her used to engagement point, pop it into first, no gas necessary and slowly release clutch untill it starts moving

Well she did pretty good! She only stalled it a few times and my clutch is fine, no smell. She got i going and drove aroudn the parking lot a a few times. A natural!!

Good job on the teaching. Hopefully she'll pick it up soon, and then you can drink all you want when you guys go out
