I'd have to say Koraku Ramen on 2nd street in LA.
Although for chashu, i like daikokuya

I just had Mr. Ramen today, and it cured my hangover so I'm a fan. Other than that I used to eat at Ramen-Ya when I lived a few houses down from there.
