samsung is really bad about updates. I was interested in the samsung until there were reports of never getting froyo on the phone. The nexus one comes stock with Froyo

lg is coming out with a dual core in Q1. i wasnt aware of 2.3 being out already... i will def. be going to xda to get a piece of the pie.
Anyways... like someone posted above... go to www.xda-developers.com and then go to captivate... honestly.. if i were you i would wait another week or two for others to test and tweak the 2.3 and go straight to that... no need to take baby steps 2 times.

You don't Root and then put it on a foryo rom....
You put it on froyo and then root again. Often you must unroot just to install a new rom and then reroot again. I had to do this from 2.1 to 2.2
