I've done two of these.... they were ok. My suggestion - get her email addy, email a bit. If she doesn't seem to be too psycho, set up a time to meet for coffee at Border's/Barnes and Nobles - set it for 9pm, so at worst you only have 1 hr of pain and out $3 for the coffee.... if it goes well, you can always stroll somewhere to hang out more or make another date.

I would go out with her, I hope you have a great time. I can tell you the odds are against you. If she was really good looking, and has all those good things the parents are saying, then chances are she won't need her parents to set her up with a date, so chances are pretty good that she is a dog.
My parents set me up with a few girls, and one of them actually turned out to be really good looking. She turned out to be not the right girl for me but there is that chance. She was fun as heck. The other ones were UGLY as hell.

When I hear this description..."She's very pretty, respectful, went to a good school, come from a good family background, well-cultured, etc." I think of two things...BORING and BUTT ugly 
. Who knows though...she may have her parents convinced she's managing the corner Starbucks, when in fact she's stripping at the corner nudie bar.
Give it shot...what do you have to lose. If things don't go well, you can always drop her on a friends doorstep.

Go find a girl yourself. Please dont let your family get involved in your love life. If you have no luck finding a girl yourself, go to church. You will find plenty of them.
