The American River is the most popular place -- it has three bends.
You have the North bend which is a Class IV/V -- is not for beginners, you need a guide and you need to be in very good shape. This is the kinda thing you do if you've been rafting a few times. About $160-$200 for the day.
The middle bend is all class III/IV -- it's designed for aggressive first timers. I'd probably recommend this one. About $120-$150 for the day.
The south bend is all class III and below, it's for little kids, and relaxing in a raft. $100-$120 for the day.
That being said, California isn't exactly releasing much water into the American river this year because of our lack of water, so this year may not be the best year to go.

http://gotwhitewater.com/ is the group I have used for the last four years. Their 2 day trips are great. I was really disappointed to hear they weren't going past July this year. Rafting weekend is one of my favorite weekends of the summer!
