Wouldn't running significantly different widths on the same size rim result in messed up contact patches from the tire being bent or stretched? And wouldn't it be better to use narrower rims when possible to reduce rotational weight?

The experience from racers is you will get the most grip from a tire with the widest rim that the tire was meant for, so while you might occur some additional weight, generally the increase in grip makes up for it.
