I ended up going down to the Lexington reservoir, but there were too many other cars around, the light was all wrong and the photos ended up being crap. Not worth posting.
But thanks to your responses I've got some other ideas and I'll take some time out this holiday weekend to try some new spots.

Easy way - shoot from another car
Hard way - build or buy a rig that attaches to the car being photographed. Then use a remote trigger to trigger the shutter. The rig needs to be several feet away from the car to get a full body shot. You can use a shorter rig if you use an ultrawide angle, but your car will look retarded.
Keep in mind you don't to have the car moving fast to create motion in photos. You can drag the shutter a bit to blur the background.
Edit: If you use a rig, you'll also have to photoshop it out of the shot later too.

Here's the latest shoot I did on Friday night at a local spot. I think I could have done a little bit more on the location and position of the cars, but I was pressed for time. Anyway, it's all about finding something that's not too typical that you would see everyday.
